Quick Dinner

One of my favorite quick dinners is fried rice. You need celery, leftover rice (or Rice-a-Roni) , butter, any other vegetables you like, and one or two eggs.
Chop two stalks of celery and quickly stir it into the melted butter.
Add the rice to the skillet (this is leftover rice with chicken). Stir it until it is hot.
Break an egg into the center of the rice and wait a minute or two, until it starts to set around the edges.
Fold the egg into the rice as it cooks.
I finished the rice with some blanched asparagus and lemon juice, soy sauce if needed. The rice was golden and crispy on the bottom. Twenty minutes from refrigerator to table.
