Quick Dinner

One of my favorite quick dinners is fried rice. You need celery, leftover rice (or Rice-a-Roni) , butter, any other vegetables you like, and one or two eggs.

Chop two stalks of celery and quickly stir it into the melted butter.

Add the rice to the skillet (this is leftover rice with chicken). Stir it until it is hot.

Break an egg into the center of the rice and wait a minute or two, until it starts to set around the edges.

Fold the egg into the rice as it cooks.

I finished the rice with some blanched asparagus and lemon juice, soy sauce if needed. The rice was golden and crispy on the bottom. Twenty minutes from refrigerator to table.

Calves

This little guy kept grabbing mouthfuls of hay. Next week our wet weather will let up a bit, so everyone gets to go out to the fields.

The cows always remember how wonderful it is to be brushed.

Muffy's Calf

Hank came into the house at about 4:30 last night and said that Muffy was in labor. By 6:oo this little guy had made his appearance. Good job, Muffy. Look at those eyes. I think the girls have picked "Nemo" for his name.

Bread

This is molasses rye bread starting to rise.

Ready for the oven.
